kyoord's Extremely High-Phenolic oil is the oleocanthal champion of this collection. At 2,012 mg/kg total polyphenols and 1,260 mg/kg oleocanthal, it carries more of the specific anti-inflammatory compound than any other oil here — a direct result of pressing early-harvest Kalamon olives, the variety naturally richest in oleocanthal.
The credibility comes from the founder and the testing. kyoord was created by Dr. Limor Goren, a cancer researcher and molecular biologist, and the company third-party lab tests each batch and then re-tests after three months of cold storage to confirm the polyphenols are stable, not just high at bottling. The olives are hand-harvested extremely green and unripe from a small family farm in the southern Peloponnese, and the oil is left unfiltered in glass.
