Why Unpasteurized Matters
Since 2007, a USDA mandate has required that virtually all commercially sold almonds in America be "pasteurized" before sale — including almonds labeled "raw." There is no labeling requirement disclosing the method used. The two permitted methods are steam treatment, which degrades enzymes and oxidizes heat-sensitive fats, and propylene oxide (PPO) fumigation — a chemical classified as a probable human carcinogen by the EPA and banned for use on food in most other countries. Over 68% of US almonds are treated with PPO. Organic almonds avoid PPO but are still steam-pasteurized. Under the Bonham Gold Label standard, both methods are disqualifying. An almond that has been heated or chemically treated is no longer a truly raw, whole food. The products on this page were chosen because they are genuinely, verifiably unpasteurized — and we explain exactly why and how.
Our Evaluation

Spain does not require almonds to be pasteurized. There is no USDA mandate, no PPO fumigation, no steam treatment. What makes Terrasoul particularly strong is the variety itself. Their almonds are the Valencia variety — a Spanish cultivar not commercially grown in the United States. Valencia almonds have a higher natural oil content and a more pronounced, true almond flavor than the Nonpareil and Carmel varieties that dominate California production. The difference is noticeable. These are the almonds that taste the way almonds are supposed to taste — rich, slightly sweet, with a depth that no pasteurized nut can replicate because heat has not stripped away what makes them distinctive.
The certification stack is strong for a packaged grocery product. USDA Organic, certified by CCOF — one of the most rigorous organic certifying bodies in the country. Non-GMO Project Verified, which is an independent third-party confirmation rather than a brand self-declaration.
