The Truth About "Raw" Almonds Sold in the United States

Since 2007, a USDA mandate has required that virtually all commercially sold almonds in America be "pasteurized" before sale — including almonds labeled "raw." There is no labeling requirement disclosing the method used. The two permitted methods are steam treatment, which degrades enzymes and oxidizes heat-sensitive fats, and propylene oxide (PPO) fumigation — a chemical classified as a probable human carcinogen by the EPA and banned for use on food in most other countries. Over 68% of US almonds are treated with PPO. Organic almonds avoid PPO but are still steam-pasteurized. Under the Bonham Gold Label standard, both methods are disqualifying. An almond that has been heated or chemically treated is no longer a truly raw, whole food.
