The process transforms the corn in ways that raw grinding cannot. It loosens and removes the outer hull of each kernel, dramatically increasing the bioavailability of key nutrients. Niacin (vitamin B3), which is present in corn but locked in a form the human body cannot absorb, becomes fully available after nixtamalization — a discovery that historically prevented widespread pellagra in corn-dependent populations. The calcium from the lime is absorbed into the kernel, increasing the corn's mineral content. The amino acid profile improves. The dough becomes more pliable and cohesive, with a flavor that is deeper and more complex than anything possible from untreated corn flour. Industrial masa harina shortcuts this process for speed and cost. Masienda does not. Their corn is nixtamalized using the traditional method, then low-and-slow dried to preserve everything the process unlocks.
